Roast potato w/ sumac
Preheat oven to 425
1-1.5 lb potatoes
Cut into small chunks (size of half of thumb)
Toss w/ olive oil, a pinch of salt, and 2 tspn sumac
Put on tray w/ foil. Cook 12 minutes, turned over, 12 more minutes; sometimes potatoes take longer
Roast cauliflower
pre heat to 425
chop one head cauliflower down to the size you want
chop 1 onion into long, thin slices
chop 4 cloves garlic into rough chunks
Toss with olive oil, salt, pepper, roast for 35-40 minutes (until some brown)
Roast broccoli w/ "pickled" shallots
preheat oven to 425
dice 3 thai chilis and one half shallot
boil 1/4 cup vinegar with 1 tblsn sugar, pour over chilis and shallots
let sit while do everything else
chop broccli into smallish pieces (maybe bite size?)
toss w/ olive oil, salt and pepper
roasted at 425 for 20 minutes (add some raisins for the last 5 minutes)
Can pour the shallot stuff over, or use for dipping
